Zucchini Ring

Ingredients list
- 1 – 2 zucchinis, grated
- Salt
- 1 sheet of puff pastry
- Pesto paste
- Handful of pine nuts
- Crumbled feta
- Sesame seeds
- Egg wash; whisk together 1 egg with 1 tablespoon of milk
- Honey
Method
- Preheat the oven to 180°C (350°F)
- Grate the zucchini and squeeze out excess water over a bowl, working in small sections to ensure it’s well drained.
- Prepare puff pastry: Lay out a square sheet of puff pastry and spread a layer of pesto over the sheet.
- Layer the zucchini, pine nuts, and crumbled feta cheese evenly over the pesto-covered pastry. Roll the pastry into a cylinder shape.
- Use a knife to make 5-6 slits along the rolled pastry. Twist the pastry into a circle and place it on a baking tray.
- Brush the rolled pastry with an egg wash and sprinkle sesame seeds over the top.
- Bake the pastry at 180°C for 40-45 minutes, or until golden brown and cooked through.
- Once baked, drizzle a small amount of honey over the pastry.
