Winter Pasta Salad

Ingredients list
- 500g Chicken thighs – skin on
Marinade
- 4 cups cooked spiral pasta
- ½ cup red olives (Kalamata)
- 1 cup cucumber – chopped
- 1 cup cherry tomatoes
- 1 cup sweet potato – roasted in bite sized pieces
- Toasted pine nuts
- Fresh parsley
- Fresh basil
- 1 block of fried halloumi – sliced
- 2 tbsp honey
- Chilli flakes
Vinaigrette
- 2 tbsp olive oil
- 1 tbsp maple syrup
- ½ lemon – juice
- Salt and pepper
Method
- In a large bowl, combine cooked pasta with sweet potatoes, cucumber, cherry tomatoes, red olives, toasted pine nuts, parsley, and basil.
- Prepare the Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, maple syrup, salt, and pepper.
- Cook the Halloumi: In a pan, gently fry slices of halloumi until golden brown. Drizzle with honey and sprinkle with chilli flakes.
- To assemble the salad, combine the cooked halloumi with the pasta mixture and pour over the vinaigrette. Toss gently to combine.
