Tina’s Roast Feta Pasta

Ingredients list
- Block of feta
- 1 cup cherry tomatoes
- 1 cup of red and yellow peppers, roughly chopped into large pieces
- Handful of Kalamata olives, pitted and chopped
- Spring onion, chopped
- Dried oregano
- Orzo or Risoni
- Olive oil
- Parsley, chopped
- Salt and pepper
Method
- Preheat your oven to 180°C (350°F)
- Place the block of feta cheese into the centre of a baking tray.
- Scatter the chopped cherry tomatoes, peppers, spring onions, and pitted olives around the feta.
- Drizzle with olive oil and season with salt, pepper, and oregano.
- Bake in the oven at 180°C for 25 minutes, or until the feta is softened and the vegetables are tender.
- Once out of the oven, use a fork to break up the softened feta and mix it with the vegetables.
- Stir in some cooked orzo and garnish with freshly chopped parsley.
