Ingredients list

  • Tortilla wraps
  • 1 cup mozzarella cheese
  • Handful of spinach
  • Fresh parsley
  • Fresh chives
  • Crumbled feta

Method

  • Prepare the tortilla: Heat a tortilla of your choice in a pan over medium-high heat.
  • On one half of the tortilla, layer mozzarella cheese, spinach, parsley, chives, and crumbled feta.
  • Fold the other half of the tortilla over the toppings to form a pocket. Press down gently and cook the quesadilla on both sides until golden brown and the cheese is melted.
  • Once cooked, slice the quesadilla pocket in half and enjoy immediately!
