Smashed Broccoli

Ingredients list
- 1 head of broccoli
- ¼ cup olive oil
- ⅓ cup lemon juice
- 1 tsp garlic powder
- Salt and pepper, to taste
- Parmesan cheese, grated
Method
- Boil a head of broccoli in salted water for 6-8 minutes until tender. Drain and rinse with cold water, then pat dry.
- Chop the broccoli florets and place them on a baking tray.
- Using the bottom of a glass, gently press down on the florets to flatten them, then pat off any excess moisture.
- In a bowl, combine olive oil, lemon juice, garlic powder, and salt and pepper to create the dressing.
- Toss the flattened broccoli with the dressing, ensuring it’s well coated, and then sprinkle with Parmesan cheese.
- Bake in the preheated oven at 180°C for 20-25 minutes, or until the broccoli reaches your desired level of crispiness.
