Smashed Broccoli

Ingredients list

  • 1 head of broccoli
  • ¼ cup olive oil
  • ⅓ cup lemon juice
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Parmesan cheese, grated

Method

  • Boil a head of broccoli in salted water for 6-8 minutes until tender. Drain and rinse with cold water, then pat dry.
  • Chop the broccoli florets and place them on a baking tray.
  • Using the bottom of a glass, gently press down on the florets to flatten them, then pat off any excess moisture.
  • In a bowl, combine olive oil, lemon juice, garlic powder, and salt and pepper to create the dressing.
  • Toss the flattened broccoli with the dressing, ensuring it’s well coated, and then sprinkle with Parmesan cheese.
  • Bake in the preheated oven at 180°C for 20-25 minutes, or until the broccoli reaches your desired level of crispiness.
