Scrambled Egg Breakfast Burrito

Ingredients list

Vegetables

  • 2 eggs, whisked
  • Tortilla
  • Salt and pepper
  • Shredded cheese of choice
  • Sliced tomato
  • Handful of fresh spinach

Method

  • Whisk two eggs in a bowl.
  • Heat a small amount of oil in a pan over medium heat.
  • Pour the eggs into the pan and let them cook until they are just beginning to set.
  • Before the eggs are fully cooked, place a tortilla on top of the eggs and press down gently. Cook for 1-2 minutes until the bottom of the tortilla is golden brown.
  • Carefully flip the tortilla to brown the other side. Sprinkle shredded cheese, salt, and pepper on top of the tortilla. Cook until the cheese is melted.
  • Assemble the Burrito; Remove the tortilla from the pan. Fill it with sliced tomato and spinach. Roll up the tortilla to form a burrito.
