Scrambled Egg Breakfast Burrito

Vegetables
- 2 eggs, whisked
- Tortilla
- Salt and pepper
- Shredded cheese of choice
- Sliced tomato
- Handful of fresh spinach
Method
- Whisk two eggs in a bowl.
- Heat a small amount of oil in a pan over medium heat.
- Pour the eggs into the pan and let them cook until they are just beginning to set.
- Before the eggs are fully cooked, place a tortilla on top of the eggs and press down gently. Cook for 1-2 minutes until the bottom of the tortilla is golden brown.
- Carefully flip the tortilla to brown the other side. Sprinkle shredded cheese, salt, and pepper on top of the tortilla. Cook until the cheese is melted.
- Assemble the Burrito; Remove the tortilla from the pan. Fill it with sliced tomato and spinach. Roll up the tortilla to form a burrito.
