Rocket and Beetroot salad

Ingredients list

Salad

  • 4 cups Rocket – washed
  • 1 can beetroot- drained
  • 2 tbsp pine nuts – toasted
  • ½ cup goats cheese

Dressing

  • ¼ cup lemon juice
  • 1 tbsp Dijon mustard
  • ¼ cup olive oil
  • 1 tbsp salt
  • ¼ tbsp pepper

Method

  • In a bowl, combine the dressing ingredients and whisk (or shake) thoroughly to emulsify.
  • In a separate serving dish, arrange rocket, beetroot, pine nuts, and goat cheese.
  • Drizzle the dressing over the salad just before serving.
