Pumpkin Gratin

Ingredients list

  • ½ Butternut pumpkin, cut into bite sized cubes
  • 3 eggs
  • 1 cup cream
  • 1 tbsp flour
  • Salt and pepper
  • Bunch Spring onion, chopped
  • Handful of fresh sage
  • 1 cup panko crumbs
  • 1 cup cheddar cheese, grated
  • Grapeseed oil

Method

  • Preheat your oven to 180°C (350°F).
  • Chop pumpkin into cubes.
  • Spray a baking dish with olive oil and add the pumpkin.
  • In a separate bowl, whisk together eggs, cream, flour, salt, and pepper. Pour this mixture over the pumpkin cubes and toss to coat evenly.
  • Sprinkle spring onions and sage over the pumpkin.
  • In another bowl, combine breadcrumbs and grated cheddar cheese, then sprinkle this mixture generously over the pumpkin.
  • Drizzle a little olive oil on top and bake for 30 minutes, or until golden and cooked through.
