Koulourakia – Greek Easter Cookies

Ingredients list

  • 500g unsalted butter – room temperature
  • 2 cups caster sugar
  • Zest of 3 oranges
  • 7 cups plain flour
  • 4 large eggs
  • 1 tbsp vanilla extract
  • ½ cup squeezed orange juice
  • 1 tbsp baking powder
  • ½ tbsp baking soda
Egg wash
  • 1 egg and 3 tbsp of milk
  • Sesame seeds to dress

Method

  • Preheat the oven to 170 degrees Celsius (fan-forced).
  • In a mixer (or with handheld beaters), cream your butter and sugar together until fluffy and pale in colour.
  • In a separate bowl zest the oranges and set aside.
  • To the creamed butter add the eggs, one at a time mixing until combined.
  • Add 1 cup of flour and mix well.
  • In a separate bowl, combine the orange juice, zest, vanilla, baking powder, and baking soda. Stir well until it fizzes.
  • Add the creamed butter and sugar to the juice mixture. Then, gradually add the remaining flour and mix until a dough is formed.If it’s too sticky, add another tablespoon of flour until you reach a good consistency. If the mix feels too crumbly, you can add another egg or an extra splash of orange juice (or both).
  • Shape the dough into a ball and let it rest for 30 minutes.
  • On a clean board, create your cookies by experimenting with twists, knots, or spirals. Place them on a baking tray, brush with egg wash, and sprinkle with sesame seeds.
  • Bake in the oven at 170 degrees for 20 minutes, or until your cookies are golden.
