Healthy Tuna Rice bowl

Ingredients list
- 1 tbsp toasted pine nuts
- 4 slices fried halloumi
- 5 cherry tomatoes, chopped
- ⅓ cucumber, chopped
- ⅓ avocado, sliced
- 1 tin tuna in oil
- Store-bought coleslaw
- Shredded iceberg lettuce
- French vinaigrette dressing
- Fresh chopped parsley (to serve)
- Store-bought basmati rice packet (or use your preferred rice)
Method
- Toast the pine nuts: In a medium-high pan, toast the pine nuts until they turn golden brown. Set aside.
- Cook the haloumi: Using the same pan (no oil needed), add the sliced halloumi and cook until golden and crispy on both sides.
- Assemble the bowl: In a serving bowl, layer 1 cup of rice, lettuce, coleslaw, cherry tomatoes, haloumi, cucumber, and tuna.
- Finish and serve: Top with the toasted pine nuts, fresh parsley, and a drizzle of French vinaigrette.
Notes
- Add a small squeeze of lemon juice to your avocado to keep it fresh and prevent browning.
