Greek green beans

Ingredients list

  • 1 red onion
  • 500g chopped green beans
  • Olive oil
  • 1 minced garlic clove
  • 1 tsp oregano
  • Salt and pepper
  • ½ cup cherry tomatoes – chopped in half
  • 1 tbsp tomato paste
  • 1 cups water
  • A pinch of fresh parsley, dill and chives
  • Crumbled feta (to serve)

Method

  • Add some olive oil to a saucepan on medium heat.
  • Sautee your red onion until soft, and then add in your green beans
  • Add minced garlic, oregano and salt and pepper.
  • Add the cherry tomatoes, tomato paste and water, then cover and cook the beans to your liking.
  • To serve sprinkle with fresh herbs and crumbled feta
