Greek Chicken Risoni

Ingredients list

  • Olive oil
  • 1 Red onion, diced
  • 6 Chicken chops (bone-in, skin-on chicken thighs)
  • Salt and pepper
  • 4 tsp sweet paprika
  • Pinch dried oregano flakes
  • 1 tsp ground cinnamon
  • 1 can diced tomatoes
  • 3 cups chicken stock
  • 1/2 cup cherry tomatoes
  • 2-3 cloves sliced garlic
  • 2 cups risoni
  • Spring onion
  • Fresh tarragon
  • Fresh oregano

To Serve

  • Olive oil
  • Spring onion
  • Crumbled feta
  • Steamed green beans

Method

  • In a deep cast-iron pan, drizzle olive oil and add the chopped red onion. Cook until the onion is slightly translucent.
  • Press the chicken into the pan, covering the bottom. Season with salt, pepper, paprika, oregano, and cinnamon. Cook until the chicken is browned, then flip and repeat the seasonings. Brown the other side.
  • Pour in the can of tomatoes and stir to combine.
  • Stir in the chicken stock, sliced garlic, cherry tomatoes, and risoni.
  • Sprinkle with spring onion, tarragon, and additional oregano. Cover the pan and transfer it to the oven. Bake at 180°C for 30 minutes.
  • Once the risoni is cooked, top with fresh spring onion and crumbled feta. Serve with fresh green beans and enjoy!
