- 80g Goats cheese log
- ¼ cup Pistachios (chopped)
- ¼ cup Cranberries (chopped)
- 1 heaped TBSP Honey
- Dried Crackers (for serving)
Method
- On a board, finely chop pistachios and cranberries, then combine them thoroughly. Spread this mixture evenly on a surface as wide as your goat cheese log.
- Drizzle honey over the nut and cranberry mixture
- Roll the goat cheese log over the mixture, ensuring it coats the cheese evenly, including the ends.
- To serve, place the coated cheese log in a serving dish. Drizzle another layer of honey over the top. Serve alongside your favourite crackers.
