Garlic Parmesan Chicken

Ingredients list

  • 500g Chicken thighs – skin on

Marinade

  • 4 garlic cloves, minced
  • 1 Lemon, juiced
  • ¼ cup Parmesan
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp chilli flakes
  • 1 tbsp honey
  • ¼ cup olive oil
  • Salt and pepper

Method

  • Preheat your oven to 180°C (350°F)
  • Prepare the Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, honey, paprika, onion powder, chilli flakes, salt, pepper, and Parmesan cheese.
  • Place the chicken and marinade into a zip-lock bag. Seal the bag and massage the marinade into the chicken to ensure it’s evenly coated. Marinate in the refrigerator for at least 2 hours.
  • Arrange the marinated chicken on a baking tray, reserving half of the marinade for basting.
  • Bake the chicken at 180°C for 15-20 minutes, basting with the reserved marinade halfway through the cooking time.
  • Once cooked through, remove from the oven and serve.
