Fresh scones

Information

Ingredients list

  • 3 ½ cups self-raising flour (sifted)
  • 1 cup lemonade
  • 1 cup thickened cream
  • A pinch of salt (optional)
  • Egg wash: 1 egg mixed with 1 tbsp milk
  • Strawberry jam
  • Whipped cream

Method

  • Preheat the oven to 200°C (or 180°C for fan-forced ovens).
  • In a bowl, combine the sifted flour, lemonade, and cream (add salt if desired) until just mixed.
  • On a clean, lightly floured surface, gently press out the dough and cut it into scone shapes.
  • Place the cut scones onto a parchment-lined baking tray and brush the tops with the egg wash.
  • Bake in the preheated oven for 15 minutes, or until the scones are golden brown.
  • Serve warm with jam and freshly whipped cream.
