Delicious Baked Broccolini

- 2 bunches broccolini stems
- 1 punnet cherry tomatoes
- tsp garlic powder
- Pinch chilli flakes *optional
- Pepper
- Olive oil
- Pine nuts
- Parmesan, grated
Method
- Preheat your oven to 180°C (350°F)
- Arrange the washed broccolini and cherry tomatoes on a baking dish.
- Drizzle generously with olive oil, then season with salt, pepper, chilli flakes, and garlic powder.
- Roast in the oven for 5 minutes.
- Sprinkle pine nuts over the vegetables and roast for an additional 5 minutes, or until tender and lightly charred.
- Garnish with freshly grated Parmesan cheese and serve.
