  • 2 bunches broccolini stems
  • 1 punnet cherry tomatoes
  • tsp garlic powder
  • Pinch chilli flakes *optional
  • Pepper
  • Olive oil
  • Pine nuts
  • Parmesan, grated

Method

  • Preheat your oven to 180°C (350°F)
  • Arrange the washed broccolini and cherry tomatoes on a baking dish.
  • Drizzle generously with olive oil, then season with salt, pepper, chilli flakes, and garlic powder.
  • Roast in the oven for 5 minutes.
  • Sprinkle pine nuts over the vegetables and roast for an additional 5 minutes, or until tender and lightly charred.
  • Garnish with freshly grated Parmesan cheese and serve.
