Date Hedgehogs (Snickers bites)

Ingredients list
- 8 dates
- 3 tbsp peanut butter
- 1 block of chocolate (I’m using leftover Easter chocolate)
- 1 cup desiccated coconut
- 1 cup Rice Krispies
Method
- Melt the chocolate: In a glass bowl over steam, melt the chocolate. (To do this, add a small amount of water to a pot and
balance a glass bowl on top, making sure the bowl doesn’t touch the water. Add the chocolate to the bowl and stir gently until fully melted.) - Prepare the dates: Slice the dates in half and remove the pits.
- Stuff the dates: Fill each date with peanut butter, smoothing the surface with a butter knife.
- Coat the dates: Using skewers, dip each stuffed date into the melted chocolate, ensuring it’s fully coated.
- Add the toppings: In a baking tray, mix the Rice Krispies and desiccated coconut. After coating the dates in chocolate, transfer them to the tray and toss them in the mixture to coat.
- Set the dates: Line up the coated dates on a baking tray and place them in the fridge for at least 30 minutes to set.
