Baked Pumpkin ravioli

Ingredients list

  • 1 Packet Ravioli – Store-bought
  • 500g Napoli sauce – Store-bought
  • Pumpkin – pre-cooked
  • 250g Ricotta cheese
  • Parmesan
  • 250g Mozzarella
  • Pesto – Store-bought
  • Handful of fresh basil – torn

Method

  • Preheat the oven to oven at 180°C (350°F)
  • Spread a thin layer of Napoli sauce on the bottom of a baking tray.
  • Layer the ravioli over the sauce and add more Napoli sauce on top (this will cook the pasta while baking).
  • Add the pumpkin, ricotta, and the remaining Napoli sauce.
  • Finish with parmesan, mozzarella, a few dollops of pesto, and basil. Cover with foil.
  • Bake for 20 minutes at 180 degrees, then remove the foil and bake for an additional 5 minutes, until golden brown on top.
