Baked Potatoes Naughty vs Nice

Ingredients list
- 2 large Rustic potatoes (washed thoroughly)
- Grapeseed oil
- Kosher Salt
The ‘Naughty’ potato
- Butter
- Cheese of choice
- Sour cream
- Crispy bacon
- chives
The ‘Nice’ potato
- Greek yoghurt
- Guacamole
- Salsa
- Fresh coriander
Method
- Preheat your oven to 185°C.
- Prepare the Potatoes: Thoroughly wash and scrub the potatoes. Then, using a fork to prick them all over (see note).
Place the potatoes on a parchment-lined baking tray. Liberally rub them with oil and sprinkle generously with salt.
Bake in the preheated oven for 60-70 minutes, or until tender. - For the ‘Naughty’ Potato: Cut a cross section in the potato and squeeze from underneath to open it up. Top with butter, cheese, sour cream, crispy bacon, and finish with chives.
- For the ‘Nice’ Potato: Cut a cross section in the potato and squeeze from underneath to open it up. Top with a generous dollop of Greek yoghurt, guacamole, salsa, and finish with fresh coriander.
Notes
- Pricking the potatoes all over will help release steam during cooking and avoid them exploding in your oven.
- Any salt is fine, I just find the Kosher salt has a stronger flavour
