Smashed Potato, Naughty vs Nice

Ingredients list
- 4-5 rustic potatoes, pre boiled
- Generous handful Parmesan cheese
- Italian herbs
- Olive oil
- Salt and pepper
The ‘Naughty’ dipping sauce
- Store-bought aioli
- Sweet chilli sauce
The ‘Nice’ dipping sauce
- Greek yoghurt
- Cucumber

Method
- Preheat the Oven: Preheat your oven to 200°C (400°F)
- Prepare the Potatoes: Quarter the potatoes and boil them in salted water for approximately 20 minutes, or until tender.
- On a baking tray lined with baking paper, create two sides: one for the ‘Naughty’ and one for the ‘Nice’ potatoes.
- For the ‘Naughty’ side, sprinkle Parmesan cheese directly on the baking paper.
- Smash the Potatoes: Drain the boiled potatoes and lay them out on the baking tray.
- Use the bottom of a glass to press each potato flat on the tray
- Drizzle olive oil over the potatoes and season with Italian herbs, salt, and pepper on both sections of the tray.
- Bake the potatoes in the oven at 200°C for 35 minutes, or until crispy and golden.
- Prepare the Dressings: For the ‘Naughty’ dressing: Combine aioli with sweet chilli sauce.
- For the ‘Nice’ dressing: Mix Greek yoghurt with chopped cucumber, olive oil, salt, and pepper. Adjust seasoning to taste.
- Serve the crispy potatoes with your choice of dressing-or both
