Greek Lemon chicken

Ingredients list

  • 1 Lemon, sliced
  • 10-12 Chicken thighs, skin on
  • Olive oil
  • 1 lemon, zested
  • Pinch of dried oregano
  • Pint of mixed Italian herbs
  • 2-3 Garlic cloves, sliced
  • Fresh dill
  • Fresh rosemary
  • Fresh oregano
  • Salt and pepper

Dressing

  • 1 lemon, juiced
  • ¼ cup Olive oil
  • Salt
  • Dried oregano
  • Italian herbs
  • Fresh chives (to garnish)

Method

  • Preheat oven to 180°C (350°F)
  • Slice the lemon and arrange the slices in a baking dish.
  • Pat the chicken dry and place on top of the lemon slices, skin side up.
  • Rub the chicken with lemon zest and season with salt, pepper, Italian mixed herbs, fresh oregano, fresh chives, dill, and rosemary. Add garlic and drizzle with olive oil.
  • Roast the chicken in the oven at 180°C for about 30-40 minutes, or until fully cooked.
  • Prepare the dressing; In a bowl, combine the lemon juice, olive oil, salt, pepper, Italian herbs, and oregano. Whisk together until emulsified.
  • Pour the dressing over the hot chicken immediately after removing it from the oven. For extra flavour, squeeze the roasted lemon slices over the chicken to release additional juice. Garnish with fresh oregano and chives.
