Mexican Burgers

Ingredients list

  • 250g minced beef
  • ½ packet of taco seasoning
  • Salt and pepper
  • 2 Tortillas – store bought
  • Olive oil
  • 2 handfuls of cheddar cheese – grated
  • Tomato – sliced
  • Avocado
  • Shredded lettuce
  • Fresh coriander
  • Salsa

Method

  • Generously season the minced beef with salt, pepper, and a taco seasoning mix.
  • Roll the seasoned beef into small balls, then press each ball flat onto a tortilla.
  • Heat olive oil in a pan over medium-high heat. Place the tortilla with the beef side down into the pan. Press down lightly to cook the patty, frying for about 2-3 minutes.
  • Once the patty is cooked, remove from the pan and top with grated cheese, tomatoes, avocado, shredded lettuce, fresh coriander, and tomato salsa.
  • Fold the tortilla in half to form a taco-like shape. Serve with a squeeze of fresh lime juice for added flavour.
