Winter Pasta Salad

Ingredients list

  • 500g Chicken thighs – skin on

Marinade

  • 4 cups cooked spiral pasta
  • ½ cup red olives (Kalamata)
  • 1 cup cucumber – chopped
  • 1 cup cherry tomatoes
  • 1 cup sweet potato – roasted in bite sized pieces
  • Toasted pine nuts
  • Fresh parsley
  • Fresh basil
  • 1 block of fried halloumi – sliced
  • 2 tbsp honey
  • Chilli flakes

Vinaigrette

  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • ½ lemon – juice
  • Salt and pepper

Method

  • In a large bowl, combine cooked pasta with sweet potatoes, cucumber, cherry tomatoes, red olives, toasted pine nuts, parsley, and basil.
  • Prepare the Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, maple syrup, salt, and pepper.
  • Cook the Halloumi: In a pan, gently fry slices of halloumi until golden brown. Drizzle with honey and sprinkle with chilli flakes.
  • To assemble the salad, combine the cooked halloumi with the pasta mixture and pour over the vinaigrette. Toss gently to combine.
