Pumpkin Gratin

Ingredients list
- ½ Butternut pumpkin, cut into bite sized cubes
- 3 eggs
- 1 cup cream
- 1 tbsp flour
- Salt and pepper
- Bunch Spring onion, chopped
- Handful of fresh sage
- 1 cup panko crumbs
- 1 cup cheddar cheese, grated
- Grapeseed oil
Method
- Preheat your oven to 180°C (350°F).
- Chop pumpkin into cubes.
- Spray a baking dish with olive oil and add the pumpkin.
- In a separate bowl, whisk together eggs, cream, flour, salt, and pepper. Pour this mixture over the pumpkin cubes and toss to coat evenly.
- Sprinkle spring onions and sage over the pumpkin.
- In another bowl, combine breadcrumbs and grated cheddar cheese, then sprinkle this mixture generously over the pumpkin.
- Drizzle a little olive oil on top and bake for 30 minutes, or until golden and cooked through.
