Garlic Parmesan Chicken

- 500g Chicken thighs – skin on
Marinade
- 4 garlic cloves, minced
- 1 Lemon, juiced
- ¼ cup Parmesan
- 1 tbsp paprika
- 1 tbsp onion powder
- 1 tbsp chilli flakes
- 1 tbsp honey
- ¼ cup olive oil
- Salt and pepper
Method
- Preheat your oven to 180°C (350°F)
- Prepare the Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, honey, paprika, onion powder, chilli flakes, salt, pepper, and Parmesan cheese.
- Place the chicken and marinade into a zip-lock bag. Seal the bag and massage the marinade into the chicken to ensure it’s evenly coated. Marinate in the refrigerator for at least 2 hours.
- Arrange the marinated chicken on a baking tray, reserving half of the marinade for basting.
- Bake the chicken at 180°C for 15-20 minutes, basting with the reserved marinade halfway through the cooking time.
- Once cooked through, remove from the oven and serve.

For more flavour I like to leave my chicken to marinate overnight
