Zucchini Ring

Ingredients list

  • 1 – 2 zucchinis, grated
  • Salt
  • 1 sheet of puff pastry
  • Pesto paste
  • Handful of pine nuts
  • Crumbled feta
  • Sesame seeds
  • Egg wash; whisk together 1 egg with 1 tablespoon of milk
  • Honey

Method

  • Preheat the oven to 180°C (350°F)
  • Grate the zucchini and squeeze out excess water over a bowl, working in small sections to ensure it’s well drained.
  • Prepare puff pastry: Lay out a square sheet of puff pastry and spread a layer of pesto over the sheet.
  • Layer the zucchini, pine nuts, and crumbled feta cheese evenly over the pesto-covered pastry. Roll the pastry into a cylinder shape.
  • Use a knife to make 5-6 slits along the rolled pastry. Twist the pastry into a circle and place it on a baking tray.
  • Brush the rolled pastry with an egg wash and sprinkle sesame seeds over the top.
  • Bake the pastry at 180°C for 40-45 minutes, or until golden brown and cooked through.
  • Once baked, drizzle a small amount of honey over the pastry.
