Baked Pumpkin ravioli

Ingredients list
- 1 Packet Ravioli – Store-bought
- 500g Napoli sauce – Store-bought
- Pumpkin – pre-cooked
- 250g Ricotta cheese
- Parmesan
- 250g Mozzarella
- Pesto – Store-bought
- Handful of fresh basil – torn
Method
- Preheat the oven to oven at 180°C (350°F)
- Spread a thin layer of Napoli sauce on the bottom of a baking tray.
- Layer the ravioli over the sauce and add more Napoli sauce on top (this will cook the pasta while baking).
- Add the pumpkin, ricotta, and the remaining Napoli sauce.
- Finish with parmesan, mozzarella, a few dollops of pesto, and basil. Cover with foil.
- Bake for 20 minutes at 180 degrees, then remove the foil and bake for an additional 5 minutes, until golden brown on top.

This is a great way to use up ingredients in the fridge and make store-bought items your own.
