Barbecued Greek Lamb Chops

Ingredients list
- 8-10 Lamb chops
Marinade
- Olive oil
- 2 tbsp cracked black pepper
- 2 tbsp garlic granules
- 3 tbsp dried oregano
- 1 lemons rind
- Fresh rosemary
Dressing
- ¼ cup olive oil
- Juice of 1 lemon
- 2 tbsp salt
- Fresh oregano – torn
Method
- To prepare the marinade, add all the ingredients to a baking tray and mix together. Add more olive oil if the marinade looks too dry.
- Press the lamb chops into the marinade, ensuring both sides are evenly coated and
- Place the chops in the fridge for a minimum of 2 hours
- Preheat the BBQ and cook the lamb chops to your liking, basting with rosemary sprigs.
- For the dressing, combine olive oil, lemon juice, fresh oregano, and salt.
- Pour the dressing over the cooked lamb chops.
- For extra flavour, brown your leftover lemons on the BBQ and squeeze them over the cooked chops.
- Serve with coleslaw or a side salad of your choice.
