Prawn Risoni

Ingredients list

  • ¼ red onion – chopped
  • 1 Garlic clove – chopped
  • 1 cup dried orzo (risoni)
  • 200g prawns – peeled
  • Pinch of chilli flakes
  • Pinch of oregano
  • ½ cup cherry tomatoes (halved)
  • ½ can crushed tomatoes
  • 1 cup water
  • 1 large handful of spinach
  • 1 bay leaf
  • Salt and pepper
  • Handful of fresh chives & parsley
  • Handful of feta cheese

Method

  • Place a deep pan over medium heat and add olive oil.
  • Once the oil is hot, add the prawns to the pan. Season them with chilli flakes and oregano while cooking. Remove the prawns from the pan once they are cooked through.
  • In the same pan, sauté the red onion along with cherry tomatoes. Add more olive oil if the pan seems dry.
  • Stir in the risoni and ensure it is coated with the seasoned ingredients in the pan.
  • Pour in half a can of crushed tomatoes and add a cup of water to the pan.
  • Add a bay leaf to the mixture and reduce the heat to medium. Allow the mixture to simmer gently until the risoni is fully cooked, adding more water if necessary to achieve desired consistency.
  • Once the risoni is cooked, remove the bay leaf from the pan. Stir in the spinach until it is wilted. Cover the pan and let it sit for a few minutes.
  • To serve, garnish with fresh chives, parsley, prawns and crumble feta cheese on top.
